Apple Pie Egg Rolls

So, cooking for two... I am still on the working on scaling things properly and planning meals with common ingredients to minimize waste.  After making the southwest egg rolls for dinner for two nights, I still had some egg roll wrappers left over.  So, I came up with this recipe to use the last few up and make dinner a little bit more special, since we were already eating the same thing we did the day before.

Ingredients:

2 apples - peeled and diced I used fugi since it is what we usually eat and had around

1/2 tablespoon flour

1/2 tablespoon granulated sugar

1/2 tablespoon brown sugar

1 tsp lemon juice

1 tsp vanilla

1 tsp cinnamon

egg roll wrappers (4-6)

Mix all the ingredients up in a bowl, except for the egg roll wrappers.  I tasted mine after I mixed everything and was a bit worried I had made it too sweet, but the end result was perfect for us.  The Mr. HATES when things have too much sugar, and he ate every last bite which is a good sign.  I used roughly two tablespoons of the filling per wrapper, rolled up the same way that I did for the southwest egg rolls and sealed with a bit of water.  Don't overfill these!  You are likely to rip the wrapper and end up with a mess when they bake.    Then sprayed both sides with oil.  Bake at 425 F  for 15 minutes, flipping half way through.  Enjoy warm!  These would be oh so good with some vanilla ice cream.
