5 Ways We Love to Eat Eggplant + 3 We can’t wait to try!

We are in the middle of peak garden season in northern Indiana, when we have an abundance of everything we are growing. I’ll never complain about too many homegrown veggies, but sometimes I am left wondering “what else do I make with this?” Right now the ‘this’ is eggplant. I’ve been stuck making a few of the same eggplant meals over and over the past few years but I’ve been working on branching out. I’m linking to some recipes that are staples in our house as well as a few that I’m excited to try, hopefully you find something new too!

Loves : our go to ways to cook with eggplant

  1. Eggplant Sliders : These can be made fairly quick, or you can really fancy them up. The recipe linked is a good basic jumping off point, but I’ve also made them with panko, added caramelized onions, toasted the buns with a garlic butter and more.

  2. Loaded Eggplant Rounds : I have these on my meal plan again this week, and if I can make them while caring for a newborn who is cluster feeding during meal prep time, I assure you they are easy. The eggplant gets crispy on the outside and creamy on the inside, plus any time you add bacon and cheese it is a win.

  3. Eggplant Parm : The most classic way to prep eggplant in my mind. I have made it recently with gluten free panko served with gluten free pasta. I’ll make a large enough pan to eat for at least 2 nights. Leftovers are my jam, and this is just as good the 2nd night.

  4. Eggplant Involtini : This is delicious, but certainly a bit more work than I am looking for at the moment. I always do the oven prep method like suggested in the recipe.

  5. Eggplant Zucchini Pasta : We just had this one, and it was super fast and delicious. Anything that you can make in one pot is a winner in my book.

Our “to make” list

  1. Eggplant Pizzas : On any given day we are likely to have pepperoni, cheese, sauce and other veggies to throw on these pizzas. They should be fairly quick to put together and I can’t wait to give them a try.

  2. Roasted Eggplant : I’ve fried it, baked it but I have yet to grill eggplant so I am excited to give it a whirl as a side dish.

  3. Eggplant Meatballs - The idea is weird enough that I really want to try making them. Meat free meatballs… made with eggplant. I’m so very intrigued.
