Marshmallow Crunch Brownies
Summer is the season of cookouts and easy to grab and eat foods. When it comes to desserts my mind goes to brownies, cookies, and Rice Krispie treats. In general the less utensils needed the better. I have seen a few variations of this dessert, but anytime you combine chocolate, Rice Krispies, peanut butter, and marshmallow, you have a winner in my book. This dessert is easy to whip together for a cookout and will certainly be a hit. I made them over the 4th, and the recipe makes plenty.
Ingredients:
Box brownie mix (and the ingredient need to make said box of brownies)
2 cups mini marshmallows
2 cups chocolate chips
1 1/4 cups peanut butter
5 tablespoons butter
3 cups Rice Krispies
Directions:
Make the brownies in a 9" x 13" pan per the box instructions.
While the oven is still on, spread the marshmallows over the brownies and return to the oven for 3 minutes. I also turned the broiler on at the end to really brown the top nicely.
Let the brownies and marshmallow cool. In the meantime heat the chocolate chips, butter, and peanut butter in a microwave safe bowl at 30 second increments until smooth and melted. Fold in the Rice Krispies, and spread over top the marshmallows.
Let set before cutting and enjoying! Sure you can eat these with a fork, but picking them up and getting a little messy is far more enjoyable.
The concept of this dessert can also be made gluten free relatively easily just by using your favorite gluten free brownie, and by using a gluten free rice cereal.
